Description

Make quick, easy peanut butter bars using only a few pantry staples. These require no baking and set fast.


Ingredients

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 6 cups crisp rice cereal

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium saucepan over medium heat, combine the peanut butter, sugar, and butter. Stir constantly until the mixture is completely melted and smooth. Do not let it boil.
  3. Remove the saucepan from the heat. Stir in the vanilla extract.
  4. Pour the hot peanut butter mixture over the crisp rice cereal in a large bowl. Mix gently until the cereal is evenly coated.
  5. Press the mixture firmly and evenly into the prepared baking pan. Use a piece of wax paper or the back of a spatula to flatten the top.
  6. Refrigerate for at least 1 hour, or until firm.
  7. Lift the bars out of the pan using the parchment paper overhang. Cut into squares before serving.

Notes

  • For a richer flavor, substitute brown sugar for white sugar.
  • If you prefer a firmer bar, reduce the butter by 1 tablespoon.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
