Description

Easy kid-friendly banana bread baked into perfect mini loaves.


Ingredients

Scale
  • 1 and 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups mashed ripe bananas (about 34 medium)
  • 1/4 cup milk
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 12-cavity mini loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, mash the ripe bananas. Stir the milk into the mashed bananas.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the banana mixture, starting and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Fold in the chocolate chips if using.
  8. Divide the batter evenly among the prepared mini loaf cavities.
  9. Bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the mini loaves cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
