Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set this dry mixture aside.
  3. In a large bowl, cream the softened butter with the granulated sugar and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Add the mashed bananas and the squeezed, grated zucchini to the wet ingredients. Mix until just combined.
  6. Gradually add the dry ingredient mixture to the wet mixture. Mix on low speed until just incorporated. Do not overmix.
  7. Fold in any optional additions like walnuts or chocolate chips.
  8. Pour the batter evenly into the prepared loaf pan.
