Description

A fragrant and authentic Vietnamese beef noodle soup, perfect for a comforting and flavorful meal.

Ingredients

Scale
  • 1 pound beef brisket or chuck, thinly sliced
  • 1 large onion, quartered
  • 4-inch piece of ginger, sliced
  • 2 star anise
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 teaspoon coriander seeds
  • 1/4 cup fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 8 cups beef broth
  • 1 pound banh pho (fresh or dried rice noodles)
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped green onions
  • 1/4 cup thinly sliced yellow onion
  • Lime wedges, for serving
  • Bean sprouts, for serving
  • Thai basil leaves, for serving
  • Jalapeno slices, for serving

Instructions

  1. Toast the spices: In a dry skillet over medium heat, toast the star anise, cinnamon stick, cloves, and coriander seeds until fragrant, about 2-3 minutes.
  2. Prepare the broth: In a large pot, combine the beef brisket, quartered onion, sliced ginger, toasted spices, fish sauce, sugar, salt, and beef broth.
  3. Simmer the broth: Bring to a boil, then reduce heat to low, cover, and simmer for at least 2 hours, or until the beef is tender.
  4. Strain the broth: Remove the beef and set aside. Strain the broth through a fine-mesh sieve into a clean pot. Discard the solids.
  5. Cook the noodles: Cook the rice noodles according to package directions. Drain and rinse with cold water.
  6. Slice the beef: Thinly slice the cooked beef against the grain.
  7. Assemble the bowls: Divide the cooked noodles among serving bowls. Top with sliced beef, chopped cilantro, green onions, and thinly sliced yellow onion.
  8. Serve: Ladle the hot broth over the noodles and beef. Serve immediately with lime wedges, bean sprouts, Thai basil, and jalapeno slices on the side.

Notes

  • For a richer broth, you can use a combination of beef bones and brisket.
  • Adjust the seasoning to your preference by adding more fish sauce, sugar, or salt.
  • If using dried rice noodles, soak them in hot water before boiling to speed up the cooking process.
