Description
Make a rich, creamy, and tangy dressing using tahini, lemon juice, and water. This recipe is completely vegan and requires no cooking.
Ingredients
Scale
- 1/2 cup tahini
- 1/4 cup fresh lemon juice
- 2 tablespoons cold water (plus more for thinning)
- 1 clove garlic, minced
- 1 teaspoon maple syrup (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the tahini, lemon juice, minced garlic, maple syrup (if using), salt, and pepper into a medium bowl.
- Whisk the ingredients together vigorously. The mixture will seize up and become very thick, almost paste-like. This is normal.
- Slowly drizzle in the cold water, one tablespoon at a time, while continuing to whisk constantly.
- Continue whisking until the dressing emulsifies and becomes smooth and creamy. Add more water, one teaspoon at a time, until you reach your desired pouring consistency.
- Taste the dressing and adjust salt, lemon juice, or maple syrup as needed.
- Use immediately or store in an airtight container in the refrigerator.
Notes
- If your dressing becomes too thick after refrigeration, whisk in a few drops of water to loosen it before serving.
- For a thinner dressing, increase the water content slightly. For a thicker sauce, use less water or add a bit more tahini.
- If the dressing tastes bitter, add a small amount of sweetener like maple syrup or a pinch of sugar.
