Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Wash and pierce the potatoes several times with a fork. Bake directly on the oven rack for 50 to 60 minutes, or until easily pierced with a fork.
  3. Allow the potatoes to cool slightly. Cut them in half lengthwise and scoop the flesh into a large bowl, leaving about a quarter-inch of potato skin intact in each shell. Set the empty skins aside on a baking sheet.
  4. Mash the potato flesh thoroughly. Add the milk, butter, sour cream, 1 cup of cheddar cheese, bacon, green onions, salt, and pepper. Mix well.
  5. Stir in the lightly beaten eggs until just combined. Do not overmix.
  6. Spoon the potato mixture evenly back into the reserved potato skins.
  7. Arrange the filled skins in the prepared baking dish.
  8. Top the filled potatoes with the remaining 1 cup of cheddar cheese.
