Description

These high-protein turkey spinach meatballs are a healthy and delicious meal. They are easy to make and perfect for a weeknight dinner. Baked until golden and simmered in a simple tomato sauce, they are a crowd-pleaser for all ages.


Ingredients

  • 1 pound lean ground turkey
  • 1/2 cup finely chopped fresh spinach
  • 1/4 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, lightly beaten
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 24 ounces marinara sauce

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, chopped spinach, panko breadcrumbs, Parmesan cheese, beaten egg, minced garlic, oregano, salt, and pepper.
  3. Gently mix all the ingredients until just combined. Do not overmix, as this can make the meatballs tough.
  4. Roll the mixture into about 1.5-inch meatballs. You should get approximately 18-20 meatballs.
  5. Place the meatballs on the prepared baking sheet.
  6. Bake for 15-20 minutes, or until the meatballs are cooked through and lightly browned.
  7. While the meatballs are baking, warm the marinara sauce in a large skillet or pot over medium heat.
  8. Once the meatballs are done baking, carefully add them to the simmering marinara sauce.
  9. Simmer the meatballs in the sauce for at least 10-15 minutes to allow the flavors to meld.
  10. Serve hot with your favorite pasta, zucchini noodles, or as is.

Notes

  • For a finer texture, you can pulse the spinach in a food processor before adding it to the mix.
  • If you don’t have panko breadcrumbs, regular breadcrumbs or even rolled oats can be substituted.
  • Feel free to add a pinch of red pepper flakes to the sauce for a little heat.
