- 12 cups Chex cereal (rice, corn, or wheat mix)
- 1 cup pretzel twists
- 1 cup mixed nuts (pecans or peanuts recommended)
- 1 cup (2 sticks) unsalted butter
- 2 cups packed light brown sugar
- 1/2 cup light corn syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
- In a very large bowl, combine the Chex cereal, pretzels, and nuts. Set aside.
- In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture reaches a full rolling boil. Boil without stirring for exactly one minute.
- Remove the saucepan from the heat immediately. Stir in the vanilla extract.
- Quickly stir in the baking soda and salt. The mixture will foam up. Work fast.
- Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently fold everything together until the cereal is completely coated.
- Spread the coated cereal mixture in a single layer onto the prepared baking sheets. Do not let pieces overlap too much.
- Bake for 45 minutes, stirring every 15 minutes to prevent burning and promote even coating.
- Remove from the oven and let the mix cool completely on the baking sheets. The mix will become crunchy as it cools. Once cool, break apart any large clumps.
Notes
- For extra flavor, you can stir in 1 cup of chocolate chips or M&Ms after the mix has cooled for 15 minutes.
- Store the finished toffee Chex mix in an airtight container at room temperature for up to one week.
- If you prefer a saltier mix, increase the added salt in the toffee mixture to 3/4 teaspoon.
