Description

Make this easy toffee Chex mix recipe for a crunchy, sweet, and salty snack perfect for parties or holidays.


Ingredients

  • 12 cups Chex cereal (rice, corn, or wheat mix)
  • 1 cup pretzel twists
  • 1 cup mixed nuts (pecans or peanuts recommended)
  • 1 cup (2 sticks) unsalted butter
  • 2 cups packed light brown sugar
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 250 degrees Fahrenheit. Line two large baking sheets with parchment paper.
  2. In a very large bowl, combine the Chex cereal, pretzels, and nuts. Set aside.
  3. In a medium saucepan, combine the butter, brown sugar, and corn syrup. Cook over medium heat, stirring constantly, until the mixture reaches a full rolling boil. Boil without stirring for exactly one minute.
  4. Remove the saucepan from the heat immediately. Stir in the vanilla extract.
  5. Quickly stir in the baking soda and salt. The mixture will foam up. Work fast.
  6. Pour the hot toffee mixture evenly over the cereal mixture in the large bowl. Gently fold everything together until the cereal is completely coated.
  7. Spread the coated cereal mixture in a single layer onto the prepared baking sheets. Do not let pieces overlap too much.
  8. Bake for 45 minutes, stirring every 15 minutes to prevent burning and promote even coating.
  9. Remove from the oven and let the mix cool completely on the baking sheets. The mix will become crunchy as it cools. Once cool, break apart any large clumps.

Notes

  • For extra flavor, you can stir in 1 cup of chocolate chips or M&Ms after the mix has cooled for 15 minutes.
  • Store the finished toffee Chex mix in an airtight container at room temperature for up to one week.
  • If you prefer a saltier mix, increase the added salt in the toffee mixture to 3/4 teaspoon.
