Ingredients

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon sesame oil
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 1/4 cup chopped green onion, plus extra for garnish
  • 1 head butter lettuce or romaine lettuce, leaves separated and washed
  • 1 tablespoon vegetable oil

Instructions

  1. In a small bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil. Set aside the teriyaki sauce.
  2. In another small bowl, mix the cornstarch with the water until smooth to create a slurry. Set aside.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  4. Pour the prepared teriyaki sauce over the cooked turkey. Stir well to coat.
  5. Bring the mixture to a gentle simmer. Slowly stir in the cornstarch slurry. Cook for 1-2 minutes, stirring constantly, until the sauce thickens and coats the turkey nicely.
  6. Remove the skillet from the heat. Stir in the 1/4 cup of chopped green onion.
  7. Spoon the teriyaki turkey mixture into the center of each lettuce leaf.
  8. Garnish with extra green onion. Serve immediately.
