Tasty Beef Enchilada Casserole for Cinco de Mayo

Description

A simple, layered beef enchilada casserole that is perfect for serving a crowd at your Cinco de Mayo celebration.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning mix
  • 1 cup water
  • 1 (10 ounce) can red enchilada sauce, divided
  • 12 corn tortillas, cut in half
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup sour cream
  • 2 large eggs
  • 1/2 cup chopped fresh cilantro for garnish

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef and onion. Cook until beef is browned and onion is soft. Drain excess fat.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, stirring occasionally. Stir in half of the enchilada sauce. Remove from heat.
  4. In a small bowl, whisk together sour cream and eggs until smooth. Set aside.
  5. Spread a thin layer of the remaining enchilada sauce on the bottom of the prepared baking dish.
  6. Arrange half of the tortilla pieces over the sauce in a single layer.
  7. Spread half of the beef mixture over the tortillas. Sprinkle with half of the Monterey Jack and cheddar cheeses.
  8. Spoon half of the sour cream mixture over the cheese layer. Sprinkle with black beans.
  9. Repeat the layers: remaining tortillas, remaining beef mixture, remaining cheeses, and remaining sour cream mixture.
  10. Pour the remaining half of the enchilada sauce evenly over the top layer.
  11. Bake for 25 to 30 minutes, or until the casserole is bubbly and the cheese is melted and lightly browned.
  12. Let the casserole rest for 10 minutes before cutting. Garnish with fresh cilantro before serving.

Notes

  • You can assemble this casserole up to 24 hours ahead of time. Cover tightly and refrigerate. Add 10-15 minutes to the baking time if baking directly from the refrigerator.
  • For a spicier flavor, add 1/4 teaspoon of cayenne pepper to the beef mixture when adding the taco seasoning.
  • If you prefer, you can substitute ground turkey for the ground beef.
