  • 1 pound chorizo sausage, casings removed
  • 1 large sweet potato, peeled and diced into 1/2-inch cubes
  • 1/2 red onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional toppings: fried eggs, avocado, cilantro

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chorizo and cook, breaking it up with a spoon, until browned. Remove chorizo with a slotted spoon and set aside, leaving the drippings in the skillet.
  2. Add diced sweet potato to the skillet and cook for 8-10 minutes, stirring occasionally, until tender-crisp.
  3. Add diced red onion and green bell pepper to the skillet and cook for another 5-7 minutes, until softened.
  4. Stir in minced garlic and smoked paprika, and cook for 1 minute until fragrant.
  5. Return the cooked chorizo to the skillet. Season with salt and pepper to taste.
  6. Cook for an additional 2-3 minutes, stirring to combine all ingredients.
  7. Serve hot, topped with fried eggs, avocado, or cilantro if desired.
