- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 1/2 cups chopped pecans, plus 1/4 cup for topping
- 1/2 cup brown sugar (for optional glaze)
- 2 tablespoons milk (for optional glaze)
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a standard 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set this dry mixture aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
- Fold in the 1 1/2 cups of chopped pecans.
- Pour the batter into the prepared loaf pan. Sprinkle the remaining 1/4 cup of pecans over the top.
- Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
- If using the glaze: While the bread cools slightly, whisk together the brown sugar and milk in a small bowl until smooth. Drizzle the glaze over the warm bread before slicing.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- For an extra nutty flavor, toast the pecans lightly before adding them to the batter.
- If you do not have buttermilk, mix 1 cup of milk with 1 tablespoon of white vinegar or lemon juice and let it sit for 5 minutes before using.
- This bread freezes well once cooled. Wrap tightly in plastic wrap and foil.
