Description

Create the ultimate festive Sugar Cookie Cheesecake that perfectly blends a creamy, rich cheesecake filling with the sweet, buttery flavor of sugar cookies. This dessert uses a sugar cookie crust and includes sugar cookie dough pieces throughout, making it a show-stopping centerpiece for any gathering.

Ingredients

Scale
  • 1 cup crushed sugar cookies (or premade sugar cookie dough for crust)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1 cup chilled sugar cookie dough (cut into small pieces for inclusion)
  • Optional: Festive sprinkles for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9-inch springform pan with parchment paper.
  2. Prepare the crust: If using crushed cookies, mix them with melted butter and press firmly into the bottom of the prepared pan. If using dough, press the dough evenly across the bottom.
  3. Bake the crust for 8 minutes. Let it cool slightly.
  4. In a large bowl, beat the softened cream cheese and granulated sugar until smooth and lump-free.
  5. Mix in the vanilla extract and almond extract.
  6. Add the eggs one at a time, mixing just until combined after each addition. Do not overmix.
  7. Stir in the sour cream until the batter is uniform.
  8. Gently fold in the small pieces of sugar cookie dough.
  9. Pour the cheesecake batter over the cooled crust.
  10. Bake for 45 to 55 minutes, or until the edges are set but the center still has a slight jiggle.
  11. Turn off the oven and crack the door open slightly. Let the cheesecake cool inside the oven for 1 hour to prevent cracking.
  12. Remove from the oven and cool completely on a wire rack.
  13. Chill the cheesecake in the refrigerator for at least 6 hours, preferably overnight.
  14. Before serving, decorate the top with festive sprinkles.

Notes

  • For a truly easy route, you can use store-bought sugar cookie dough for both the crust and the inclusions.
  • To achieve a perfectly smooth batter, ensure your cream cheese is truly at room temperature.
  • If you want to avoid water baths, cooling the cheesecake slowly in the turned-off oven helps maintain a creamy texture.
