Description

Easy and fun stuffed zucchini boats perfect for getting kids to eat their veggies. A great way to use summer zucchini.

Ingredients

Scale
  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 pound ground beef or turkey
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • Optional toppings: grated Parmesan cheese, fresh basil

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Wash and trim the ends of the zucchini. Cut each zucchini in half lengthwise.
  3. Using a spoon, scoop out the seeds and some of the flesh, leaving about a 1/4-inch shell to create a boat shape. Chop the removed zucchini flesh finely.
  4. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cooked 3-4 minutes until softened.
  5. Add the ground meat to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  6. Stir in the chopped zucchini flesh, garlic powder, salt, and pepper. Cook for another 3-4 minutes until the zucchini is slightly tender.
  7. Pour in the marinara sauce and stir to combine. Simmer for 5 minutes.
  8. Place the hollowed-out zucchini boats on the prepared baking sheet. Spoon the meat mixture evenly into each zucchini boat.
  9. Sprinkle the shredded mozzarella cheese over the filling of each boat.
  10. Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  11. Let cool slightly before serving. Add optional toppings if desired.

Notes

  • For picky eaters, you can finely mince the onion and zucchini flesh so they are less noticeable in the filling.
  • You can make the meat filling ahead of time and assemble the boats just before baking.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated.
