Description

Enjoy a refreshing and vibrant Spanish Gazpacho, a chilled tomato soup perfect for warm days. This recipe brings together the best of summer produce for a delightful culinary experience.

Ingredients

Scale
  • 3 lbs ripe tomatoes, roughly chopped
  • 1 cucumber, peeled, seeded, and roughly chopped
  • 1 green bell pepper, seeded and roughly chopped
  • 1 red bell pepper, seeded and roughly chopped
  • 1/2 red onion, roughly chopped
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons sherry vinegar
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1 cup cold water, or more, as needed
  • Optional garnishes: diced cucumber, bell pepper, onion, croutons, fresh herbs

Instructions

  1. Combine the chopped tomatoes, cucumber, green bell pepper, red bell pepper, and red onion in a large bowl.
  2. Add the minced garlic, olive oil, sherry vinegar, salt, and pepper.
  3. Stir everything together to coat the vegetables.
  4. Let the mixture marinate for at least 30 minutes at room temperature to allow the flavors to meld.
  5. Transfer the marinated vegetables and their juices to a blender or food processor.
  6. Blend until smooth. If you prefer a chunkier gazpacho, pulse until you reach your desired consistency.
  7. Add cold water, a little at a time, while blending until the soup reaches your desired thickness.
  8. Taste and adjust seasoning with more salt, pepper, or vinegar if needed.
  9. Pour the gazpacho into a clean bowl or pitcher.
  10. Chill in the refrigerator for at least 2 hours, or until thoroughly cold.
  11. Serve chilled, with your favorite garnishes.

Notes

  • For a smoother gazpacho, you can strain the blended soup through a fine-mesh sieve.
  • Adjust the amount of vinegar and salt to your personal preference.
  • Gazpacho can be made a day in advance and will deepen in flavor.
