Instructions

- Heat about 2 inches of vegetable oil in a large skillet or Dutch oven to 350°F (175°C).

- While the chicken is frying, prepare the waffles. In a large bowl, whisk together 1 ½ cups flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together 1 ¼ cups milk, 2 eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
- Preheat your waffle iron according to manufacturer’s instructions.
- Pour about ½ cup of batter onto the hot waffle iron and cook until golden brown and crisp. Repeat with the remaining batter.
