- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1.5-inch pieces
- 1.5 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 3 tablespoons olive oil, divided
- 3 tablespoons harissa paste
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red onion, cut into wedges (optional)
- 1 lemon, cut into wedges for serving
- 1/4 cup fresh cilantro or parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, salt, and pepper. Spread the potatoes in a single layer on one half of the prepared baking sheet.
- In the same bowl, combine the harissa paste, cumin, and the remaining 2 tablespoons of olive oil. Add the chicken pieces and toss until they are fully coated in the harissa mixture.
- Arrange the coated chicken pieces on the other half of the baking sheet. If using, scatter the red onion wedges around the chicken and potatoes.
- Bake for 20 to 25 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the sweet potatoes are tender and slightly caramelized.
- Remove the sheet pan from the oven. Squeeze fresh lemon juice over the chicken and potatoes.
- Garnish with fresh cilantro or parsley before serving.
Notes
- For a creamier finish, serve with a dollop of plain Greek yogurt or sour cream mixed with a little lemon juice.
- If you prefer softer vegetables, you can toss broccoli florets or bell pepper strips with the chicken during the last 10 minutes of cooking.
- Adjust the amount of harissa paste based on your preferred spice level.
