Description

Make breakfast for a crowd easily with these simple, baked sheet pan quesadillas filled with eggs, sausage, and cheese.

Ingredients

Scale
  • 8 large flour tortillas
  • 1 cup cooked breakfast sausage, crumbled
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter, melted
  • 1/2 cup chopped bell peppers (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Lightly grease a large baking sheet.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper until combined.
  3. Place four tortillas flat on the prepared baking sheet.
  4. Divide the sausage, cheese, and bell peppers evenly over the four tortillas, leaving a 1-inch border around the edges.
  5. Pour about one-quarter of the egg mixture evenly over the fillings on each tortilla.
  6. Fold the tortillas in half to form a half-moon shape. You may need to gently press them down.
  7. Brush the tops of the folded quesadillas lightly with the melted butter.
  8. Bake for 10 minutes.
  9. Carefully flip the quesadillas. Bake for another 5 to 8 minutes, or until the tortillas are golden brown and the egg filling is set.
  10. Remove from the oven and let cool for 2 minutes before slicing into wedges.

Notes

  • For crispier edges, switch the oven to broil for the last 1-2 minutes, watching closely to prevent burning.
  • You can prepare the sausage and chop the vegetables ahead of time for faster assembly.
  • Serve with salsa or sour cream for dipping.
