- 2 large russet potatoes, peeled and shredded
- 1 tablespoon olive oil or melted butter
- Salt and pepper to taste

Instructions
- Preheat your waffle iron.
- Squeeze out as much moisture as possible from the shredded potatoes using a clean towel or cheesecloth.
- In a bowl, toss the shredded potatoes with olive oil or melted butter, salt, and pepper. Add any optional seasonings if using.
- Lightly grease the waffle iron plates if needed.
- Place a handful of the potato mixture onto the hot waffle iron, spreading it slightly. Do not overfill.
- Close the lid and cook for 5-10 minutes, or until the hash browns are golden brown and crispy. Cooking time will vary depending on your waffle iron.
- Carefully remove the hash browns with a spatula.
- Repeat with the remaining potato mixture.
- Serve immediately with your kids’ favorite toppings like ketchup or a sprinkle of cheese.
