- 1 cup chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 12 small corn tortillas
- Toppings: Chopped white onion, fresh cilantro, lime wedges
Instructions
- Place the chicken breasts or thighs in a large skillet or pot.
- Pour the chicken broth over the chicken.
- Sprinkle the chili powder, cumin, oregano, and salt evenly over the chicken.
- Bring the liquid to a simmer over medium-high heat.
- Reduce heat to low, cover the skillet, and cook for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove the chicken from the skillet and place it on a cutting board. Shred the chicken using two forks.
- Return the shredded chicken to the skillet and toss it with the remaining cooking liquid until it absorbs most of the sauce and becomes moist.
- Warm the corn tortillas on a dry skillet or comal over medium heat until soft and pliable, about 30 seconds per side.
- Assemble your tacos: Fill each warm tortilla with the seasoned shredded chicken.
- Top immediately with fresh cilantro, diced white onion, and a squeeze of fresh lime juice. Serve right away.
Notes
- For a slow cooker version: Place chicken, broth, and seasonings in the slow cooker. Cook on low for 4 hours or high for 2 hours. Shred the chicken and toss it in the remaining liquid before serving.
- If you like extra heat, add a pinch of cayenne pepper with the other spices.
- Do not skip warming the corn tortillas; they become much better when heated directly on a dry pan.
