Slow Cooker Pork Roast and Sauerkraut

Description

Make tender pork roast and sauerkraut easily in your slow cooker for a traditional, hearty meal.


Ingredients

Scale
  • 3 lb pork shoulder roast
  • 1 (32 ounce) bag sauerkraut, drained
  • 1 large onion, sliced
  • 1 cup chicken broth
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper

Instructions

  1. Place the sliced onion in the bottom of your slow cooker.
  2. Place the pork roast on top of the onions.
  3. In a small bowl, mix the chicken broth, brown sugar, caraway seeds, thyme, and pepper. Pour this mixture over the pork.
  4. Spread the drained sauerkraut evenly around and over the pork roast.
  5. Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 4 to 5 hours, until the pork is easily shredded with a fork.
  6. Remove the pork and shred it using two forks. Return the shredded pork to the slow cooker and stir it into the sauerkraut mixture.
  7. Serve hot.

Notes

  • For a richer flavor, you can sear the pork roast on all sides in a hot skillet before placing it in the slow cooker.
  • If you prefer a thicker sauce, remove some of the liquid before shredding the pork and simmer it on the stovetop until reduced.
  • This dish pairs well with mashed potatoes or egg noodles.
