- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup crushed peppermint candies (candy canes)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
- In a separate bowl, mix the melted butter, eggs, vanilla extract, and peppermint extract.
- Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
- Stir in the semi-sweet chocolate chips.
- Spread the batter very thinly and evenly onto the prepared baking sheet. You want a thin layer for maximum crunch.
- Bake for 12 to 15 minutes, or until the edges are set and slightly pulling away from the parchment.
- Remove from the oven. Immediately sprinkle the crushed peppermint candies evenly over the warm brittle.
- Let the brittle cool completely on the baking sheet. It will harden as it cools.
- Once fully cooled, break the brittle into irregular, crunchy pieces. Store in an airtight container.

- For an extra thin brittle, you can press the batter between two sheets of parchment paper using a rolling pin.
