Description

Create incredibly crunchy Peppermint Brownie Brittle, the perfect snappy holiday treat. This recipe brings fun and flavor to your baking, turning simple brownies into a festive, shareable snack.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup crushed peppermint candies (candy canes)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
  3. In a separate bowl, mix the melted butter, eggs, vanilla extract, and peppermint extract.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix.
  5. Stir in the semi-sweet chocolate chips.
  6. Spread the batter very thinly and evenly onto the prepared baking sheet. You want a thin layer for maximum crunch.
  7. Bake for 12 to 15 minutes, or until the edges are set and slightly pulling away from the parchment.
  8. Remove from the oven. Immediately sprinkle the crushed peppermint candies evenly over the warm brittle.
  9. Let the brittle cool completely on the baking sheet. It will harden as it cools.
  10. Once fully cooled, break the brittle into irregular, crunchy pieces. Store in an airtight container.

Notes

  • For an extra thin brittle, you can press the batter between two sheets of parchment paper using a rolling pin.
  • Use good quality cocoa powder for the best deep chocolate flavor.
  • If you prefer a more intense peppermint flavor, add a drop or two more of the extract to the batter.
  • This brittle is wonderful for gifting during the holidays.
