An easy and fun snack for kids using peanut butter and bananas, shaped like sushi rolls.
Ingredients

- 1 large banana
- 2 tablespoons peanut butter (or other nut/seed butter)
- Optional toppings: shredded coconut, mini chocolate chips, sprinkles, chopped nuts, granola
Instructions
- Peel the banana.
- Spread the peanut butter evenly all over the banana.
- If using toppings, sprinkle them over the peanut butter, gently pressing them in slightly.
- Slice the banana into 1/2-inch thick “sushi” pieces.
- Serve immediately.
Notes
- This is a great way to get kids involved in the kitchen. Let them spread the peanut butter and add the toppings!
- My son Leo loves his with mini chocolate chips, while Mia prefers shredded coconut.
- You can make these ahead of time, but they are best enjoyed fresh.
