Easy individual peach and blueberry cobblers perfect for kids and summer.
Ingredients

- 2 cups sliced fresh peaches (about 3 medium)
- 1 cup fresh blueberries
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup cold unsalted butter, cut into small cubes
- 1/2 cup milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Grease 6 ramekins or a small baking dish.
- In a medium bowl, gently combine peaches, blueberries, 1/4 cup sugar, cornstarch, lemon juice, cinnamon, and nutmeg.
- Divide the fruit mixture evenly among the prepared ramekins or pour into the baking dish.
- In a separate medium bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- In a small bowl, whisk together milk and vanilla extract.
- Pour the milk mixture into the dry ingredients and stir until just combined. Do not overmix.
- Drop spoonfuls of the cobbler topping over the fruit mixture in each ramekin or over the fruit in the baking dish.
- Place ramekins on a baking sheet to catch any drips.
- Bake for 25-30 minutes, or until the topping is golden brown and the fruit is bubbly.
- Let cool slightly before serving.
Notes
- You can use frozen fruit, but you may need to increase the baking time slightly.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
- These are perfect for portion control for little ones.
