Description

Easy individual peach and blueberry cobblers perfect for kids and summer.


Ingredients

  • 2 cups sliced fresh peaches (about 3 medium)
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup cold unsalted butter, cut into small cubes
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Grease 6 ramekins or a small baking dish.
  2. In a medium bowl, gently combine peaches, blueberries, 1/4 cup sugar, cornstarch, lemon juice, cinnamon, and nutmeg.
  3. Divide the fruit mixture evenly among the prepared ramekins or pour into the baking dish.
  4. In a separate medium bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  6. In a small bowl, whisk together milk and vanilla extract.
  7. Pour the milk mixture into the dry ingredients and stir until just combined. Do not overmix.
  8. Drop spoonfuls of the cobbler topping over the fruit mixture in each ramekin or over the fruit in the baking dish.
  9. Place ramekins on a baking sheet to catch any drips.
  10. Bake for 25-30 minutes, or until the topping is golden brown and the fruit is bubbly.
  11. Let cool slightly before serving.

Notes

  • You can use frozen fruit, but you may need to increase the baking time slightly.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
