- 2 large eggs

- 1/2 cup fresh orange juice
- 1/4 cup orange zest (from about 2 oranges)
- For the Glaze: 1 cup powdered sugar
- 2 tablespoons fresh orange juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or a standard loaf pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate small bowl, whisk together the milk, orange juice, and orange zest.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk/juice mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
- Pour the batter into the prepared pan.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- While the cake cools, prepare the glaze: Whisk together the powdered sugar and 2 tablespoons of orange juice until smooth. Add more juice, a half teaspoon at a time, if the glaze is too thick.
- Drizzle the glaze evenly over the cooled cake. Let the glaze set before slicing and serving.
Notes
- For an extra bright flavor, use freshly squeezed orange juice instead of bottled.
- You can bake this recipe in a 12-cup bundt pan; increase the baking time by about 10 to 15 minutes.
- If you prefer a less sweet cake, reduce the sugar in the cake batter by 2 tablespoons.
