Instructions
- Brown the ground beef and chopped onion in a large pot or Dutch oven over medium heat. Drain any excess fat.
- Add the minced garlic and cook for one minute until fragrant.
- Pour in the enchilada sauce, diced tomatoes (with juice), beef broth, chili powder, cumin, salt, and pepper. Stir to combine.
- Bring the mixture to a boil.
- Add the uncooked pasta to the pot. Stir well to prevent sticking.
