Make this simple, satisfying pasta dish entirely in one pot. White beans create a rich, creamy sauce flavored with fresh lemon and garlic, requiring minimal cleanup.


Ingredients

  • 12 ounces dried pasta (such as linguine or spaghetti)
  • 4 cups vegetable broth
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup grated Parmesan cheese (optional, omit for vegan)
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place the dried pasta, vegetable broth, rinsed cannellini beans, chopped onion, minced garlic, oregano, and red pepper flakes into a large pot or Dutch oven.
  2. Add 1 tablespoon of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of pepper.
  3. Bring the mixture to a boil over high heat, stirring frequently to prevent the pasta from sticking to the bottom.
  4. Once boiling, reduce the heat to medium-low and continue to simmer, stirring often, for 12 to 15 minutes, or until the pasta is cooked al dente and most of the liquid has been absorbed.
  5. Remove the pot from the heat. The sauce should look thick.
  6. Stir in the Parmesan cheese (if using), lemon juice, and lemon zest. Stir vigorously until the sauce becomes creamy. The beans will break down slightly, thickening the sauce further.
  7. If the sauce is too thick, add a splash of hot water or extra broth until you reach your desired consistency.
  8. Taste and adjust salt and pepper as needed.
  9. Serve immediately, garnished with fresh parsley.

Notes

  • For a smoother sauce, you can blend half of the cooked beans with a little broth before adding them back to the pot in step 4.
  • Use low-sodium broth if you are watching your salt intake.
