- 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 small yellow onion, finely chopped
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup sun-dried tomatoes, drained and chopped
- 2 cups fresh spinach
- 1 teaspoon dried Italian seasoning
- Salt and freshly ground black pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions
- Season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
- Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in the heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Bring to a simmer.
- Return the chicken to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Taste and adjust seasoning with salt and pepper if needed.
- Garnish with fresh basil or parsley if desired. Serve hot.

- For a richer flavor, you can use chicken breasts instead of thighs, but adjust cooking time to prevent drying out.
- Feel free to add other vegetables like mushrooms or bell peppers along with the onions.
