  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 2 cups fresh spinach
  • 1 teaspoon dried Italian seasoning
  • Salt and freshly ground black pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the skillet and set aside.
  3. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes.
  4. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  6. Stir in the heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Bring to a simmer.
  7. Return the chicken to the skillet. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
  8. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
  9. Taste and adjust seasoning with salt and pepper if needed.
  10. Garnish with fresh basil or parsley if desired. Serve hot.

Notes

  • For a richer flavor, you can use chicken breasts instead of thighs, but adjust cooking time to prevent drying out.
