  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup chopped yellow onion
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • For the Dumplings:
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
  2. Add chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth, scraping up any browned bits from the bottom of the pot.
  5. Return the browned chicken to the pot. Season with salt and pepper. Bring to a simmer.
  6. In a medium bowl, whisk together flour, baking powder, and salt for the dumplings.
  7. Pour in milk and melted butter. Stir until just combined. Do not overmix.
  8. Drop spoonfuls of the dumpling batter onto the simmering chicken mixture.
  9. Cover the pot and cook for 15-20 minutes, or until dumplings are cooked through and fluffy.
  10. Stir in fresh parsley before serving.

Notes

  • For extra flavor, you can add a bay leaf while the chicken simmers.
  • If you prefer, you can use chicken breast instead of thighs.
