- 1 pound smoked sausage, sliced
- 2 cups chopped zucchini
- 2 cups chopped yellow squash
- 1 cup chopped bell peppers (any color)
- 1/2 cup chopped red onion
- 2 tablespoons olive oil
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the sliced sausage, zucchini, yellow squash, bell peppers, and red onion.
- Drizzle with olive oil and sprinkle with Italian seasoning, salt, and pepper. Toss to coat everything evenly.
- Spread the mixture in a single layer on a large baking sheet.
- Bake for 20-25 minutes, or until the vegetables are tender and the sausage is lightly browned, stirring halfway through.
