- 4 (6 oz) salmon fillets, skin on or off
- 1 tablespoon olive oil
- Salt and black pepper to taste
- 1 cup fresh spinach, finely chopped
- 4 oz cream cheese, softened
- 1/2 cup crumbled feta cheese
- 2 cloves garlic, minced
- 1/4 cup heavy cream
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried dill
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the salmon fillets dry and place them on the prepared baking sheet. Brush lightly with olive oil and season with salt and pepper.
- In a medium bowl, combine the chopped spinach, softened cream cheese, feta cheese, minced garlic, heavy cream, lemon juice, and dried dill. Mix until well combined and creamy.
- Using a sharp knife, carefully cut a pocket into the thickest side of each salmon fillet, being careful not to cut all the way through.
- Spoon the spinach feta mixture evenly into the pockets of the salmon fillets. Press gently to secure the stuffing.
- Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve immediately directly from the pan.
Notes
- For extra flavor, you can add a pinch of nutmeg to the stuffing mixture.
- If you prefer a lower-fat option, substitute half of the cream cheese with Greek yogurt.
