- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup grated Parmesan cheese

- 2 tablespoons olive oil
- 4 tablespoons unsalted butter

- 1/2 cup heavy cream

Instructions
- In a bowl, combine ground chicken, breadcrumbs, egg, 1/4 cup Parmesan cheese, 2 minced garlic cloves, Italian seasoning, salt, and pepper. Mix gently until just combined.
- Roll the mixture into small, uniform meatballs (about 1 inch in diameter). You should have about 18-20 meatballs.
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Brown the meatballs on all sides, working in batches if necessary. Remove the browned meatballs and set them aside.
- Reduce heat to medium. Add the butter to the same skillet. Add the remaining 4 minced garlic cloves and cook for 1 minute until fragrant.
- Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let the broth simmer for 2 minutes.
- Stir in the heavy cream and the remaining 1/4 cup of Parmesan cheese. Stir until the sauce thickens slightly.
- Return the browned meatballs to the skillet, nestling them into the sauce.
- Cover the skillet and simmer on low heat for 10-12 minutes, or until the meatballs are cooked through (internal temperature reaches 165°F).
- Stir in the fresh parsley before serving.
Notes
- Serve these meatballs over pasta, rice, or with crusty bread to soak up the extra sauce.
- If you do not have an oven-safe skillet, you can finish cooking the meatballs in the sauce on the stovetop over low heat, covered.
