Description

Create a festive, no-bake Peppermint Bark Cheesecake that brings holiday cheer to your kitchen. This recipe is simple, fun, and perfect for sharing moments with loved ones.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1/2 teaspoon peppermint extract
  • 2 drops green food coloring (optional, for color)
  • 1/4 cup white chocolate chips, melted
  • 1/4 cup dark chocolate chips, melted
  • 1/2 cup crushed peppermint candies or candy canes

Instructions

  1. Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press this mixture firmly into the bottom of a 9-inch springform pan. Chill the crust while you prepare the filling.
  2. In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.
  3. In a separate, chilled bowl, whip the heavy whipping cream with the peppermint extract until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture. If using, add the green food coloring now and mix until you achieve a light mint color.
  5. Pour the cheesecake filling over the chilled crust and smooth the top.
  6. Drizzle the melted white chocolate and melted dark chocolate over the top of the cheesecake in decorative patterns.
  7. Immediately sprinkle the crushed peppermint candies over the chocolate while it is still wet.
  8. Refrigerate the cheesecake for at least 6 hours, or preferably overnight, until firm.
  9. Before serving, carefully release the springform pan sides. Slice and enjoy your festive creation!

Notes

  • Using cold heavy cream helps you achieve stiff peaks faster when whipping.
  • You can use store-bought graham cracker crust if you prefer to save a few minutes.
  • For the best peppermint flavor, do not skip the peppermint extract.
  • If you want a sharper chocolate contrast, use a high-quality dark chocolate for melting.
