Instructions
- Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl. Press this mixture firmly into the bottom of a 9-inch springform pan. Chill the crust while you prepare the filling.
- In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until fully combined.
- In a separate, chilled bowl, whip the heavy whipping cream with the peppermint extract until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture. If using, add the green food coloring now and mix until you achieve a light mint color.
- Pour the cheesecake filling over the chilled crust and smooth the top.
- Drizzle the melted white chocolate and melted dark chocolate over the top of the cheesecake in decorative patterns.
- Immediately sprinkle the crushed peppermint candies over the chocolate while it is still wet.
- Refrigerate the cheesecake for at least 6 hours, or preferably overnight, until firm.
