Description

Make these simple, no-bake energy bites featuring bright lemon and sweet blueberry flavors. They are a quick, healthy snack perfect for meal prep.


Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond butter (or preferred nut butter)
  • 1/4 cup ground flaxseed
  • 2 tablespoons chia seeds
  • 1/4 cup dried blueberries
  • Zest of 1 medium lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons maple syrup (or honey)
  • 1/4 teaspoon salt

Instructions

  1. Place all ingredients into a food processor.
  2. Pulse the mixture until it comes together and forms a sticky dough. You may need to stop and scrape down the sides.
  3. If the mixture seems too dry, add 1 teaspoon of water or lemon juice at a time until it holds together when pressed.
  4. Roll the dough into small, uniform balls, about 1 inch in diameter.
  5. Place the finished energy bites on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • Store the energy bites in an airtight container in the refrigerator for up to one week.
  • For longer storage, freeze them for up to three months.
  • If you prefer a stronger lemon flavor, increase the zest to the zest of 1.5 lemons.
