- 1 cup rolled oats
- 1/2 cup almond butter (or preferred nut butter)
- 1/4 cup ground flaxseed
- 2 tablespoons chia seeds
- 1/4 cup dried blueberries
- Zest of 1 medium lemon
- 2 tablespoons fresh lemon juice
- 2 tablespoons maple syrup (or honey)
- 1/4 teaspoon salt
Instructions
- Place all ingredients into a food processor.
- Pulse the mixture until it comes together and forms a sticky dough. You may need to stop and scrape down the sides.
- If the mixture seems too dry, add 1 teaspoon of water or lemon juice at a time until it holds together when pressed.
- Roll the dough into small, uniform balls, about 1 inch in diameter.
- Place the finished energy bites on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
- Store the energy bites in an airtight container in the refrigerator for up to one week.
- For longer storage, freeze them for up to three months.
- If you prefer a stronger lemon flavor, increase the zest to the zest of 1.5 lemons.
