Description

Make simple, high-protein snack cups using chocolate and coconut that require no oven time.


Ingredients

  • 1 cup vanilla or unflavored protein powder
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup natural peanut butter or almond butter
  • 2 tablespoons maple syrup or honey (optional, for sweetness)
  • 2 tablespoons coconut oil, melted
  • 24 tablespoons water or unsweetened almond milk

Instructions

  1. Line a mini muffin tin with paper liners or lightly grease the cups.
  2. In a medium bowl, combine the protein powder, shredded coconut, and cocoa powder. Mix well.
  3. Add the peanut butter, melted coconut oil, and maple syrup (if using) to the dry ingredients.
  4. Mix everything together using a spatula until a thick, crumbly dough forms.
  5. Add the water or almond milk one tablespoon at a time, mixing until the dough holds together when pressed. Do not over-moisten.
  6. Scoop the mixture evenly into the prepared muffin cups, pressing down firmly to compact the mixture.
  7. Place the tin in the freezer for at least 30 minutes to set completely.
  8. Store the finished cups in an airtight container in the refrigerator or freezer.

Notes

  • For a vegan option, use maple syrup instead of honey and ensure your protein powder is plant-based.
  • If you prefer a stronger coconut flavor, substitute 1 teaspoon of coconut extract for 1 tablespoon of the liquid.
