Description
A vibrant and aromatic Moroccan Vegetable Tagine, slow-cooked with warm spices and served alongside fluffy couscous. This dish brings a taste of North African sunshine to your table, perfect for a hearty vegetarian meal.

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cinnamon
- Pinch of cayenne pepper (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup vegetable broth
- 1 sweet potato, peeled and cubed
- 1 zucchini, chopped
- 1 red bell pepper, chopped
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1/4 cup chopped fresh cilantro
- Salt and black pepper to taste
- 1 cup couscous
- 1 1/4 cups boiling water
- 1 tablespoon butter (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Stir in garlic and ginger and cook for 1 minute until fragrant.
- Add cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for another minute, stirring constantly.
- Pour in the diced tomatoes and vegetable broth. Bring to a simmer.
- Add the cubed sweet potato, zucchini, and red bell pepper. Stir to combine.
- Cover and simmer for 20-25 minutes, or until the vegetables are tender.
- Stir in the chickpeas and cilantro. Season with salt and pepper to taste and cook for another 5 minutes.
- Meanwhile, prepare the couscous. Place couscous in a heatproof bowl. Pour boiling water over it and add butter if desired. Cover and let stand for 5 minutes. Fluff with a fork.
- Serve the tagine hot over the fluffed couscous.
Notes
- Feel free to add other vegetables like carrots, cauliflower, or green beans.
- For a richer flavor, you can add a tablespoon of tomato paste with the spices.
- Garnish with toasted slivered almonds for added texture.
