Description

A vibrant and aromatic Moroccan Vegetable Tagine, slow-cooked with warm spices and served alongside fluffy couscous. This dish brings a taste of North African sunshine to your table, perfect for a hearty vegetarian meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cinnamon
  • Pinch of cayenne pepper (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup vegetable broth
  • 1 sweet potato, peeled and cubed
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1/4 cup chopped fresh cilantro
  • Salt and black pepper to taste
  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1 tablespoon butter (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Stir in garlic and ginger and cook for 1 minute until fragrant.
  3. Add cumin, coriander, turmeric, cinnamon, and cayenne pepper (if using). Cook for another minute, stirring constantly.
  4. Pour in the diced tomatoes and vegetable broth. Bring to a simmer.
  5. Add the cubed sweet potato, zucchini, and red bell pepper. Stir to combine.
  6. Cover and simmer for 20-25 minutes, or until the vegetables are tender.
  7. Stir in the chickpeas and cilantro. Season with salt and pepper to taste and cook for another 5 minutes.
  8. Meanwhile, prepare the couscous. Place couscous in a heatproof bowl. Pour boiling water over it and add butter if desired. Cover and let stand for 5 minutes. Fluff with a fork.
  9. Serve the tagine hot over the fluffed couscous.

Notes

  • Feel free to add other vegetables like carrots, cauliflower, or green beans.
  • For a richer flavor, you can add a tablespoon of tomato paste with the spices.
  • Garnish with toasted slivered almonds for added texture.
