  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, gently mix the berries with 1/2 cup sugar, cornstarch, lemon juice, and vanilla extract. Pour the berry mixture into an 8×8 inch baking dish.
  3. In a separate bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt for the topping.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Gradually add the milk and stir until just combined. Do not overmix.
  6. Drop spoonfuls of the topping mixture over the berries.
  7. Bake for 35-45 minutes, or until the topping is golden brown and the berry filling is bubbly.
