Ingredients

  • 1 whole chicken (about 45 lbs)
  • 1/2 cup unsalted butter, softened
  • 1/4 cup white miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon black pepper
  • 1 lemon, halved
  • 1 onion, quartered
  • Fresh herbs (thyme, rosemary) for cavity

Instructions

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. In a bowl, combine the softened butter, miso paste, soy sauce, rice vinegar, ginger, and minced garlic. Mix well until you have a smooth miso butter.
  3. Pat the chicken dry thoroughly with paper towels. This helps the skin crisp.
  4. Gently loosen the skin over the chicken breasts and thighs. Rub about one-third of the miso butter directly onto the meat under the skin.
  5. Rub the remaining miso butter all over the outside of the chicken skin. Season generously with black pepper.
  6. Stuff the chicken cavity with the lemon halves, quartered onion, and fresh herbs.
  7. Place the chicken in a roasting pan. Roast at 425 degrees F (220 degrees C) for 15 minutes to start crisping the skin.
  8. Reduce the oven temperature to 375 degrees F (190 degrees C). Continue roasting for about 1 hour and 15 minutes to 1 hour and 30 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (74 degrees C). Baste occasionally with pan drippings if desired.
  9. Let the chicken rest for 15 minutes before carving. This keeps the juices inside.

Notes

  • For extra crispy skin, you can briefly place the chicken under the broiler at the very end, watching closely to prevent burning.
  • You can substitute white miso with yellow miso for a slightly deeper flavor.
  • If you have time, let the buttered chicken sit in the refrigerator for 4 hours or overnight before roasting for maximum flavor absorption.
