Description

Mini Shepherd’s Pies with a sweet potato topping are a kid-friendly twist on a classic comfort food, perfect for little hands and picky eaters alike. This recipe makes mealtime fun and nutritious.

Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 500g lean ground beef or lamb
  • 1 tbsp tomato puree
  • 300ml beef stock
  • 1 tbsp Worcestershire sauce (optional)
  • Salt and pepper to taste
  • 750g sweet potatoes, peeled and chopped
  • 50g butter
  • 50ml milk

Instructions

  1. Preheat oven to 190°C (375°F).
  2. Heat olive oil in a large pan over medium heat. Add onion, carrot, and celery and cook until softened, about 5-7 minutes.
  3. Add ground meat and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  4. Stir in tomato puree, beef stock, and Worcestershire sauce (if using). Bring to a simmer, reduce heat, and let it cook for 15-20 minutes, or until the sauce has thickened. Season with salt and pepper.
  5. While the meat is simmering, boil sweet potatoes in a pot of salted water until tender, about 15-20 minutes. Drain well.
  6. Mash the sweet potatoes with butter and milk until smooth and creamy. Season with salt and pepper.
  7. Spoon the meat mixture into individual ramekins or a large ovenproof dish.
  8. Top with the mashed sweet potato, spreading evenly.
  9. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbling.

Notes

  • You can make the meat filling and sweet potato topping ahead of time and assemble just before baking.
  • For extra hidden veggies, finely chop some zucchini or bell peppers and add them with the onion, carrot, and celery.
  • If your kids prefer regular mashed potatoes, you can substitute sweet potatoes.
  • These mini pies are great for freezing. Let them cool completely, then cover and freeze. Thaw in the refrigerator and reheat in the oven until heated through.
