Mini fruit pizzas on watermelon slices are a refreshing and fun treat for kids. They’re easy to make and perfect for a hot day.

Ingredients

Scale
  • 1 small seedless watermelon
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Assorted fresh fruits (such as strawberries, blueberries, kiwi, grapes)

Instructions

  1. Cut the watermelon into 1/2-inch thick slices. Use a cookie cutter or knife to cut out circles or other fun shapes from the watermelon slices.
  2. In a small bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  3. Spread a thin layer of the cream cheese mixture onto each watermelon shape.
  4. Arrange assorted fresh fruits on top of the cream cheese layer to resemble pizza toppings.
  5. Chill the fruit pizzas for at least 15 minutes before serving.
