Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup cherry tomatoes
- 1 cup zucchini, cut into 1-inch chunks

- 2 tablespoons olive oil
- 1 teaspoon dried herbs (like oregano or basil)
- Salt and pepper to taste
- Small wooden skewers
Instructions
- Preheat grill or oven to medium heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- In a large bowl, combine chicken, cherry tomatoes, zucchini, and bell peppers.
- Drizzle with olive oil, dried herbs, salt, and pepper. Toss gently to coat everything evenly.
- Thread the chicken and vegetables onto the small skewers, alternating ingredients.
- Grill or bake for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
- Let cool slightly before serving to kids.
Notes
- You can use other kid-friendly vegetables like broccoli florets or mushrooms.
- For very young children, you can cut the ingredients into smaller pieces before threading onto skewers or serve them deconstructed.
- These are great for picnics and packed lunches.
