Ingredients

  • 1 cup zucchini, cut into 1-inch chunks
  • 1 cup bell peppers (any color), cut into 1-inch chunks
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (like oregano or basil)
  • Salt and pepper to taste
  • Small wooden skewers

Instructions

  1. Preheat grill or oven to medium heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. In a large bowl, combine chicken, cherry tomatoes, zucchini, and bell peppers.
  3. Drizzle with olive oil, dried herbs, salt, and pepper. Toss gently to coat everything evenly.
  4. Thread the chicken and vegetables onto the small skewers, alternating ingredients.
  5. Grill or bake for 10-15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
