Description

Spice up your morning with this vibrant Mexican Chorizo and Potato Hash. It’s a delightful explosion of flavor and texture, perfect for a hearty breakfast or brunch that will get your day started with a smile.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound Mexican chorizo, casings removed
  • 1 pound potatoes, diced into 1/2-inch cubes
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 4 large eggs
  • 2 tablespoons chopped fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chorizo and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove chorizo with a slotted spoon and set aside, leaving drippings in the skillet.
  2. Add diced potatoes to the skillet. Cook, stirring occasionally, until potatoes are tender and browned, about 15-20 minutes.
  3. Add chopped onion and red bell pepper to the skillet with the potatoes. Cook until softened, about 5 minutes.
  4. Stir in minced garlic and cumin. Cook for 1 minute more until fragrant.
  5. Return the cooked chorizo to the skillet. Season with salt and black pepper to taste. Stir to combine.
  6. Create four wells in the hash mixture. Crack an egg into each well.
  7. Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-7 minutes.
  8. Garnish with fresh cilantro before serving.

Notes

  • You can use any type of potato you like, but Yukon Gold or red potatoes work well for this hash.
  • For a spicier kick, add a pinch of cayenne pepper or a diced jalapeño along with the bell pepper.
  • Serve this hash on its own or with your favorite hot sauce.
