Ingredients
Scale
- 2 pounds pork shoulder, thinly sliced
- 1 cup achiote paste
- 1/2 cup white vinegar
- 1/4 cup orange juice
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- Salt and black pepper to taste
- 1 tablespoon vegetable oil
- 1 cup diced fresh pineapple
- 1/2 cup finely chopped white onion
- 1/4 cup chopped fresh cilantro
- Corn tortillas, for serving
- Lime wedges, for serving
Instructions
- In a blender, combine achiote paste, vinegar, orange juice, garlic, oregano, cumin, cinnamon, cloves, salt, and pepper. Blend until smooth.
- Place the thinly sliced pork in a large bowl. Pour the marinade over the pork and toss to coat evenly. Cover and refrigerate for at least 4 hours, or preferably overnight.
- Heat vegetable oil in a large skillet or on a griddle over medium-high heat.
- Add the marinated pork to the hot skillet in a single layer. Cook in batches if necessary to avoid overcrowding.
- Cook the pork for 5-7 minutes per side, or until browned and cooked through with slightly crispy edges.
- While the pork is cooking, warm the corn tortillas on a separate skillet or griddle.
- To assemble the tacos, place a generous portion of cooked al pastor pork onto a warm tortilla.
- Top with diced pineapple, chopped onion, and fresh cilantro.
- Serve immediately with lime wedges on the side.
Notes
- For an authentic al pastor flavor, you can marinate the pork overnight.
- Adjust the spices to your preference. Add a pinch of cayenne pepper for a little heat.
- If you don’t have a skillet, you can grill the marinated pork.
- Feel free to add your favorite taco toppings like salsa or avocado.
