Description

Make the viral Marry Me Chicken tonight! You get tender chicken breasts smothered in a rich, creamy Parmesan sauce featuring sun-dried tomatoes and garlic. It tastes like an expensive Italian meal but is quick enough for a weeknight.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Season the chicken breasts on both sides with salt, pepper, and Italian seasoning.
  2. Heat the olive oil and butter in a large skillet over medium-high heat.
  3. Sear the chicken for 5 to 7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 1 minute until fragrant. Do not let it burn.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  6. Stir in the chopped sun-dried tomatoes and heavy cream. Bring the sauce to a gentle simmer.
  7. Reduce the heat to low and stir in the grated Parmesan cheese until the sauce is smooth and thickened. Taste the sauce and add more salt or pepper if needed.
  8. Return the cooked chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the tops of the chicken.
  9. Simmer for 2 to 3 minutes to heat the chicken through.
  10. Garnish with fresh basil before serving. Serve this creamy chicken dinner idea over pasta or rice.

Notes

  • For an extra layer of flavor, use the oil from the sun-dried tomato jar instead of plain olive oil for searing the chicken.
  • If you want to make this a Marry Me Chicken Pasta, cook 8 ounces of your favorite pasta according to package directions and toss it directly into the sauce before adding the chicken back in.
  • This recipe works well as a quick Keto dinner idea if you serve it with steamed vegetables instead of pasta or rice.
