  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese

  • 1 cup shredded mozzarella cheese
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 2 cups cooked pasta (like penne or rotini)
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. Season the chicken pieces with salt, pepper, and half of the Italian seasoning.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
  4. In the same skillet, lower the heat to medium. Add the chopped onion and cook until soft, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the cream of chicken soup, heavy cream, chicken broth, Parmesan cheese, paprika, and the remaining Italian seasoning into the skillet. Heat until the sauce is smooth and just starting to simmer.
  6. Return the cooked chicken to the skillet. Stir in the sun-dried tomatoes and the cooked pasta. Mix everything well to coat.
  7. Pour the mixture into your prepared baking dish.
  8. Top evenly with the shredded mozzarella cheese.
  9. Bake for 20-25 minutes, or until the cheese is melted, bubbly, and lightly golden.
