Description

Make-ahead breakfast burrito bites perfect for busy mornings. Freezer-friendly and kid-approved.

Ingredients

Scale
  • 6 small flour tortillas (6-inch)
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked crumbled sausage or bacon (optional)
  • 1/4 cup finely diced bell pepper (any color)
  • 2 tablespoons finely chopped onion
  • Salt and pepper to taste

Instructions

  1. Whisk together eggs and milk in a bowl. Season with salt and pepper.
  2. Heat a non-stick skillet over medium heat. Add a little oil or butter.
  3. Pour in the egg mixture and cook, stirring occasionally, until scrambled and cooked through.
  4. While the eggs cook, warm the tortillas according to package directions.
  5. In a separate small bowl, combine the shredded cheese, cooked meat (if using), bell pepper, and onion.
  6. Lay out the warm tortillas. Divide the scrambled eggs among the tortillas.
  7. Top the eggs with the cheese and vegetable mixture.
  8. Fold in the sides of each tortilla, then roll up tightly from the bottom to create a burrito.
  9. If freezing, wrap each burrito bite tightly in plastic wrap, then place in a freezer-safe bag or container. Freeze for up to 1 month.
  10. To reheat from frozen: Remove plastic wrap. Wrap in a damp paper towel and microwave for 1-2 minutes, or until heated through. Alternatively, unwrap and bake at 350°F (175°C) for 10-15 minutes.
  11. To reheat from refrigerator: Microwave for 30-60 seconds, or until heated through.

Notes

  • Finely dice vegetables for picky eaters.
  • Customize fillings based on your child’s preferences.
