Transform your post-holiday leftovers into a fantastic, easy Leftover Turkey Cranberry Panini. This warm, comforting sandwich brings new life to holiday flavors for a simple, satisfying lunch.

- 2 slices bread (sourdough or sturdy white recommended)
- 4 oz leftover cooked turkey, sliced or shredded
- 2 tablespoons cranberry sauce
- 1 slice cheese (provolone or Swiss work well)
- 1 teaspoon butter or mayonnaise for grilling
Instructions
- Spread butter or mayonnaise lightly on one side of each slice of bread.
- Flip one slice over. Spread cranberry sauce evenly on the unbuttered side.
- Layer the turkey slices over the cranberry sauce.
- Place the cheese on top of the turkey.
- Top with the second slice of bread, buttered-side up.
- Heat a skillet or panini press over medium heat.
- Place the sandwich in the hot skillet or press. Grill for 3-4 minutes per side, pressing down gently with a spatula if not using a press, until the bread is golden brown and the cheese is melted.
- Remove from heat, slice in half, and serve immediately. You have created a great lunch!
Notes
- Feel free to add a thin layer of Dijon mustard for extra tang.
- If your turkey is dry, a light brush of gravy on the turkey layer adds moisture.
- Use any firm bread you have on hand; the sturdier, the better for pressing.
