Description

Make a satisfying family dinner with this simple lasagna recipe that swaps some or all ricotta for creamy cottage cheese. It is a great comfort food option.

Ingredients

Scale
  • 1 pound ground beef or Italian sausage
  • 1 (24 ounce) jar marinara sauce
  • 1 (15 ounce) container cottage cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 9 oven-ready lasagna noodles
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground meat in a large skillet over medium heat. Drain any excess fat.
  3. Stir the marinara sauce into the cooked meat and simmer for 5 minutes.
  4. In a medium bowl, mix the cottage cheese, egg, Parmesan cheese, oregano, and garlic powder. Season with salt and pepper.
  5. Spread a thin layer of the meat sauce on the bottom of the prepared baking dish.
  6. Arrange three lasagna noodles over the sauce layer.
  7. Spread half of the cottage cheese mixture evenly over the noodles.
  8. Sprinkle one-third of the mozzarella cheese over the cottage cheese layer.
  9. Spoon another layer of meat sauce over the cheese.
  10. Repeat the layers: three noodles, the remaining cottage cheese mixture, one-third of the mozzarella, and more sauce.
  11. Top with the final three noodles, the remaining sauce, and the remaining mozzarella cheese.
  12. Cover the dish tightly with aluminum foil.
  13. Bake for 25 minutes. Remove the foil and bake for another 15 to 20 minutes, or until the cheese is bubbly and lightly browned.
  14. Let the lasagna rest for 10 minutes before slicing and serving.

Notes

  • For a high-protein lasagna, cottage cheese is a fantastic substitute for ricotta. You can use all cottage cheese or mix it half and half.
  • If you prefer not to use oven-ready noodles, cook your lasagna noodles according to package directions before assembling.
  • This recipe works well as a crockpot lasagna; cook on low for 4-5 hours after assembling.
