- 1/2 teaspoon baking soda

- 1 ripe banana, mashed
- 1 egg
- 1 cup milk

Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, mash the banana.
- Add the mashed banana, egg, milk, and melted butter or oil to the wet ingredients.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat a lightly oiled griddle or non-stick pan over medium heat.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Serve warm with your favorite toppings.
Notes
- For mini pancakes, use a smaller amount of batter.
- Add a pinch of cinnamon for extra flavor.
- These pancakes freeze well. Let them cool completely before freezing in a single layer.
