Description

These Kid-Friendly Veggie Sushi Snack Rolls are a fun and easy way to get your children to eat their vegetables. They are simple to make and perfect for busy parents.


Ingredients

  • 1 cup cooked sushi rice, cooled
  • 2 nori sheets
  • 1/2 cup finely shredded carrots
  • 1/4 cup finely diced cucumber
  • 2 tablespoons cream cheese or hummus
  • Optional: sesame seeds for garnish

Instructions

  1. Lay one nori sheet on a bamboo sushi mat or a piece of plastic wrap.
  2. Spread half of the cooled sushi rice evenly over the nori, leaving about a 1-inch border at the top.
  3. Spread 1 tablespoon of cream cheese or hummus in a thin line across the center of the rice.
  4. Sprinkle half of the shredded carrots and diced cucumber over the cream cheese/hummus.
  5. Carefully roll the nori tightly from the bottom, using the mat or plastic wrap to help create a firm roll.
  6. Moisten the top border of the nori with a little water to seal the roll.
  7. Repeat with the second nori sheet and remaining ingredients.
  8. Slice each roll into 6-8 bite-sized pieces.
  9. Garnish with sesame seeds if desired.
  10. Serve immediately or pack for a healthy snack.

Notes

  • For picky eaters, you can try different vegetable combinations like finely chopped bell peppers or avocado.
  • If your child doesn’t like nori, you can make deconstructed sushi bowls with the ingredients.
  • These rolls are best eaten fresh, but can be stored in an airtight container in the refrigerator for up to 1 day.
